Smoked Salmon
6 oz Portion
- Marinate salmon with brown sugar or maple
syrup.
- Fill wood chip bucket.
- Pre-heat at 275°F to ignite wood chips.
Set timer.
- After half an hour, add water bucket and food.
- Smoke
- at 250°F for 35 min
- or 200°F for 65 min
- or until internal temperature reaches
140°F
- or until salmon flakes with a fork
With the upper vent closed all the way,
wood smokes at 275°F, not below.
With vent opened all the way it
smokes at 250°.
