Smoked Salmon

6 oz Portion

• Marinate salmon with brown sugar or maple syrup.
• Fill wood chip bucket.
• Pre-heat at 275°F to ignite wood chips. Set timer.
• After half an hour, add water bucket and food.
• Smoke
  • at 250°F for 35 min
  • or 200°F for 65 min
  • or until internal temperature reaches 140°F
  • or until salmon flakes with a fork

With the upper vent closed all the way, wood smokes at 275°F, not below.
With vent opened all the way it smokes at 250°.
