Smoked Mahi Mahi
6 oz Portion
- Marinate mahi mahi with brown sugar or maple
syrup.
- Fill wood chip bucket.
- Pre-heat at 275°F to ignite wood chips.
Set timer.
- After half an hour, add water bucket and food.
- Smoke
- at 250° for 35 min
- or until internal temperature reaches
145°F
- or until mahi mahi flakes with a fork
- When I added the water bucket some spilled.
The wood went out and did not smoke again.
Be carefull.
With the upper vent closed all the way,
wood smokes at 275°F, not below.
With vent opened all the way it
smokes at 250°.
