RED SNAPPER MONTEREY

INGREDIENTS

METHOD
Wash and dry fillets. Cover with garlic butter on one side and place this side up. Place fish on broiler pan (after spraying pan with non-stick spray). Put a little water in pan so drippings don't stick and burn. Broil 5-7 minutes (on second rack level). Turn fillets (Optional-I broiled for another minute or two). Cover fillets with salsa and top with grated cheese. Return to broiler and broil until cheese is melted.

Optional--add capers with salsa layer or top with olives for garnish.
