Makes 4 dozen
- 1 cup (2 sticks) margarine or butter, softened.
- 1 cup brown sugar, firmly packed.
- ½ cup granulated sugar.
- 2 eggs or 4 egg whites.
- 1 teaspoon vanilla extract.
- 1½ cups all-purpose flour.
- 1 teaspoon baking soda.
- 1 teaspoon ground cinnamon.
- ½ teaspoon salt.
- 3 cups Quaker Oats (regular or quick) uncooked.
- 1 cup raisins.
- Heat oven to 350°F. In large bowl, beat together
margarine and sugars until creamy.
- Add eggs and vanilla; beat well.
- Add combined flour, baking soda, cinnamon and salt; mix well.
- Stir in oats and raisins. Drop by rounded tablespoonfuls onto
ungreased cookie sheets.
- Bake 8 to 10 minutes for a chewy OR 11 to 12 minutes
for a crisp cookie. Cool 1 minute on cookie sheet;
remove to wire rack. Cool completely.
